Turkey Noodle Soup

Chicken Noodle Soup is a classic favorite, especially for those colder months. But sometimes you don’t have chicken on hand, or want to mix things up a bit! That’s where this turkey noodle soup can come to the rescue.
Turkey is a great source of lean protein; and with the mixed veggies of your choosing, this can make for a great, healthy comfort meal.

oz chicken broth

oz frozen mixed vegetables

oz cream of chicken soup

cups turkey
cooked and chopped

oz dried egg noodles

tsp thyme
1
tsp ground basil
salt to taste
pepper to taste

cups potatoes (optional)
peeled and diced
Preparation
Combine chicken broth and vegetable mix (and optional potatoes) in a stock pot.
Cook on medium heat for 10-15 minutes or until vegetables are tender.
Add remaining ingredients and stir to combine.
Simmer for 20 minutes.
Serve immediately or freeze for a delicious meal later!
