Roasted Sweet Potatoes

tsp salt

tbsp light brown sugar

tbsp olive oil

Preparation

  1. Preheat oven to 450 degrees Fahrenheit.

  2. Peel sweet potatoes and dice into 1/2″ cubes.

  3. Add cubes to a large bowl with olive oil and toss.

  4. Add salt and brown sugar and toss again until evenly coated.

  5. Spread evenly onto a baking sheet lined with aluminum foil.

  6. Roast for 30-35 minutes, flipping every 15 minutes, until tender.

    Serves 8-10.
