Blueberry Pancakes
When you have a little extra time on a weekend morning, pull out your fluffy slippers and treat your family with blueberry pancakes! Pancakes are a go-to favorite breakfast meal. We love adding in blueberries for a delicious and healthy one-two punch; did you know that blueberries are full of antioxidants, which are great for heart health? For truly excellent blueberry pancakes, let the batter sit and rest for a while to allow the gluten you’ve created through mixing to relax. And when it comes time to pour the batter on the griddle, try to enlist some little helpers! Kids love trying to make the perfect circle, though they may need a little help when it comes to flipping.

cups milk

melted

cups blueberries
Preparation
In a large bowl, sift together flour, salt, baking powder and sugar.
Combine milk and egg and fold into the flour mixture.
Stir in butter and fold in blueberries. Set aside for 1 hour.
Heat a lightly-oiled griddle or frying pan over medium-high heat. For each pancake, pour ¼ cup batter onto the griddle. Brown on both sides and serve hot. Enjoy!
