Zucchini Turnip Spiral Salad
Taste all of the refreshing flavors of summer in our zucchini turnip spiral salad! From zesty lemon juice to sweet cherry tomatoes, you’ll find all the contents of your vegetable garden in this yummy salad. We recommend using a spiral cutter to make noodles out of the zucchini and turnip. However, if you don’t have a spiral cutter, never fear! You can also cut the zucchini into thin slices and the turnips into 1/2″ chunks. They won’t look as much like noodles, but they will taste just as delicious. Zucchini turnip spiral salad is the perfect weekend lunch for a lazy summer day; eat it outside on a back porch or lawn chair for the full effects of the season!

Preparation
Run the zucchini and turnip through a spiral cutter to make “noodles”, cutting them often so strands aren’t too long.
Slice the tomatoes in half and toss them with the zucchini and turnips. Add the onion, carrot, pesto and lemon juice. Stir and blend well!
Add salt & pepper to taste, serve immediately.
