A mix between a sweet nutty pie & a moist delicate muffin, pecan pie muffins are the perfect breakfast for the morning sitting on the porch with your favorite morning tea or warm coffee.
box light brown sugar
cups all purpose flour
cups pecans, finely chopped
sticks margarine, melted
large eggs (at room temperature, very important)
Mix flour and sugar until smooth and lump free.
By hand, add pecans and mix in well.
By mixer, beat eggs and margarine together.
Combine egg and margarine mixture with dry mixture, mixing well.
Spoon into foil cupcake liners. Bake at 375 degrees F for 18 minutes. Makes about 18-20 muffins.
