Lemon-Herb Marinade

Cut raw chicken in a clear mixing bowl with a marinade of lemon and herbs, next to a bowl of red potato chunks.

Juice of 3 lemons
1 Tbsp. dried rosemary
2 Tbsp. dried oregano
1 tsp. salt
1 tsp. ground pepper
1/4 cup olive oil
2 cloves garlic, minced
1 lb. chicken, pork or fish

In a large glass bowl, mix all ingredients together. Marinate and cover chicken or pork for 1-2 hours, fish or vegetables 1/2 hour. Discard marinade, grill – and enjoy!
