Lemon Spritzer Cookies

Lemon Spritzer Cookies are Soft & Buttery with a hint of Lemon & Sugar pressed into a flower, perfect for summer.

cups all-purpose flour

½

tsp baking powder

¼

tsp salt

1½

sticks sticks salted butter (softened)

1

cups granulated sugar

1

tbsp lemon zest (finely grated)

1

egg

1

tsp  lemon extract

½

tsp vanilla extract

Yellow sugar for decorating

Preparation

  1. Preheat Oven to 350 degrees F.

  2. In a medium bowl, whisk together dry ingredients.

  3. In another medium bowl, beat butter, granulated sugar, and lemon zest until fluffy.

  4. Add egg and extracts. Gradually mix flour mixture into the egg mixture until just combined.

  5. Using a cookie press, press dough 1 ½ inches apart on a baking sheet.

  6. Sprinkle with yellow decorating sugar.

  7. Bake until golden around the edges, about 15 minutes.

  8. Cool slightly before transferring to cooling racks.

  9. Makes about 7 dozen. Enjoy!
