lbs lbsboneless, skinless chicken breast
diced

red bell pepper
diced

zucchini
cut into ½ inch rounds

yellow squash
cut into ½ inch rounds

cups fresh mushrooms
sliced

tbsp Italian seasoning

tsp garlic powder

tsp onion powder

cups shredded Parmesan cheese
Preparation
Heat olive oil on medium heat in a large skillet.
Add chicken.
Cook 3 minutes until the outsides have started to cook.
Add vegetables and seasonings.
Cover and cook until chicken has an internal temperature of 165 degrees and vegetables are tender, stirring frequently.
Top with cheese and serve.
