Grilled Jalapeno Poppers

Looking for a way to spice up your next grill out? Give these grilled jalapeno poppers a try! With just some cheeses, corn, onion, salt, and pepper, you can stuff some jalapenos to enjoy grilled.

jalapenos (large)

cups finely grated cheddar cheese

cups chopped corn kernels

tbsp minced green onion

salt (to taste)

pepper (to taste)

Preparation

  1. Trim 1/4″ off the tops of the jalapeños, then hollow out the centers with a pepper corer.

  2. In a bowl, mix the cheese, corn and green onion, salt and pepper.

  3. Stuff the cheese mixture into each jalapeño, to within 1/8″ of the top.

  4. Set the jalapeños upright in a jalapeño roaster and put the cut tops back on top. Set the roaster on the grill (over indirect heat) and cover for about 25 minutes. Serve immediately.
