Ginny’s Lasagna

Ginny’s kids have always told her that she makes the best lasagna in the world, and we’ve been lucky enough to get the recipe from her! The combination of cottage cheese and Parmesan makes the lasagna perfectly gooey, while ground beef makes it the ultimate comfort food. Perfect for big family gatherings or just a family dinner, Ginny’s lasagna will soon become everybody’s favorite!

lbs ground beef, turkey, or sausage

cloves of garlic (minced or crushed)

1

can of tomato paste

oz tomato puree

tbsp dried parsley (divided in two)

l cottage cheese

1

cups parmesan

eggs (beaten)

whole wheat lasagna noodles (cooked)

l mozzarella cheese (shredded)

Preparation

  1. Brown meat and drain. Add garlic, tomato paste, tomato puree, and 2 Tbsp. parsley. Simmer for about an hour until thick.

  2. In a separate bowl, combine cottage and Parmesan cheeses, 2 Tbsp. parsley and eggs; set aside.

  3. Preheat oven to 375.

  4. Spread a little meat sauce in the bottom of a 9″ by 13″ pan. Layer 4 noodles, 1/3 of the meat sauce, and 1/3 of the mozzarella. Repeat for 3 layers in all. Cover with foil; bake 45 minutes. Remove foil; bake another 15 minutes. Enjoy!
