German Potato Salad

German potato salad is a classic at summer cook-outs, potlucks, and gatherings. This recipe is perfect for when you’re looking for a simple dish that will please a crowd!

l little red salad potatoes

1

l bacon, cubed, raw

small onion

cups vinegar

1

cups sugar

cups water

Thickening

¼

cups cornstarch

½

cups cold water

Preparation

  1. Boil potatoes until tender; remove skins. Slice them about 1/4″ thick and put in a large bowl with chopped onion.

  2. Fry bacon until crispy and break into pieces. Reserve 1/4 cup of bacon for topping.

  3. Mix sugar, vinegar, and water in a saucepan and bring it to a boil. Remove from heat.

  4. Add bacon to the sauce.

  5. Mix thickening like you would for gravy. Return saucepan to stovetop and bring sauce to a second boil.

  6. Gradually add thickening to sauce. Remove sauce from heat, and pour over potatoes and onion.

  7. Gently mix. Sprinkle remaining bacon on top.
