ritz crackers (crushed)
tbsp grated parmesan cheese
tsp dried basil leaves
small boneless, skinless chicken breasts (1-1/2 lb.)
cups cut-up fresh veggies (cooked: green pepper strips, carrot slices, zucchini slices, etc.)
Mix together crumbs, cheese, and basil on a plate. Rinse the chicken with cold water and then shake it. Set the chicken in the crumb mixture, making sure to coat each side of the piece. Set the chicken aside.
Heat the oil in a large, nonstick skillet on medium heat. Put the chicken in the skillet and cook for 6 to 7 minutes on each side or until golden brown on both sides and cooked through. Serve with vegetables and enjoy!
