Ingredients
2
tbsp olive oil
1
large red onion (thinly sliced)
1½
tbsp balsamic vinegar
1½
lbs lean ground turkey
4
chipotle peppers with adobo sauce from a can (minced)
⅓
cups fresh cilantro (minced)
1
clove of garlic (minced)
1½
tbsp grated lime zest
salt (to taste)
pepper (to taste)
8
slices of Monterey Jack cheese
8
hamburger buns
Preparation
Add oil to a large skillet; heat over medium heat. Add onion and stir frequently for 15 minutes (onion should look golden brown). Pour vinegar into the skillet and stir it in. Remove from medium heat, but keep it warm!
Now, preheat the grill to medium high heat. While it’s warming up, combine the turkey, chipotle, cilantro, garlic, lime zest, salt, and pepper in a large bowl, using your hands to really mix it well. Form the mixture into eight patties.
Set the burgers on the grill and cook for five minutes on one side, and then four minutes on the other. Put the cheese slices on the burgers and grill for another two minutes—burgers should be cooked through!
Put the burgers in the buns and top with the onions. Add condiments as desired. Delicious!
