Cheesy Garlic Zoodles

This fun, summery recipe of garlic zucchini noodles with cheese is a great choice for health-conscious or gluten-free people! Zucchini noodles are simply strips of zucchini peeled into long, noodle-like shapes. Garlic zucchini noodles with cheese is a delicious, light alternative to regular pasta; plus, we like to call them “zoodles,” so they’re just as much fun to talk about as they are to eat! We like adding garlic and cheese for some extra flavor, but you can feel free to substitute the garlic with fresh tomato as well.

Preparation

  1. First thing’s first: let’s create some zucchini noodles. Cut the zucchini into thin, noodle-like strips using a spiral vegetable slicer or any veggie peeler. Place the noodles in a colander and salt them liberally, letting them sit for about 20 minutes to soak and drain. Letting them sit is one of the most important parts of this recipe, so make sure to give the noodles the full 20 minutes!

  2. After 20 minutes, rinse the noodles and pat dry with a paper towel. Melt butter in a skillet, and add garlic and the zucchini noodles. Cook over medium-high heat for 4 to 5 minutes. Remove the noodles from heat and sprinkle the parmesan on top. Voila—garlic zucchini noodles with cheese!
