russet potatoes

peeled, diced, and rinsed

tbsp olive oil

cups bacon

cooked and crumbled

tsp onion powder

tsp salt

tsp pepper

cups shredded cheddar cheese

Preparation

  1. Preheat oven to 400 degrees.

  2. Grease 9×13 baking dish.

  3. Put potatoes in a large pot and add enough water to just cover the potatoes.

  4. Boil over medium-high heat until just tender, about 15 minutes.

  5. Drain potatoes and put in the prepared baking dish.

  6. Add olive oil, minced garlic, bacon, onion powder, salt, and pepper, stirring to coat potatoes.

  7. Spread evenly across baking dish. Bake for 25 minutes.

  8. Sprinkle with shredded cheese and bake an additional 5 minutes or until cheese is melted.
