Beef Enchilada

A classic staple on most Mexican restaurant menus, these beef enchiladas are a real crowd pleaser. Give this recipe a try if you’re looking for a filling and tasty dinner to serve!

lbs ground beef

1

small onion

package enchilada seasoning

1

cans refried beans

enchilada sauce

tomato sauce

large flour tortillas

shredded cheese

sliced black olives

jalapeno peppers

Preparation

  1. Cook ground beef and onions over medium heat. Drain grease off ground beef, then add enchilada seasoning.

  2. Heat refried beans separately. Fill tortilla shells with meat mixture, then refried beans, fold over like a taco.

  3. Pour enchilada sauce and tomato sauce on top of filled tortilla shells and line them in a baking dish.

  4. Bake at 350 degrees F for 30 minutes, then sprinkle shredded cheese over enchiladas and top with black olives and jalapenos.

  5. Bake until cheese is melted. Makes approximately 10 enchiladas.
