Lemon Rosemary Mashed Potatoes

Herbs and citrus combine in a delicious way in lemon rosemary mashed potatoes. We love that this recipe only requires three basic ingredients and a sprinkle of salt and pepper. Try using a spud masher to mash the potatoes. Since potatoes come in all different sizes, we made this recipe by the cup, rather than by the number of potatoes. That way the recipe will be easy to adjust, whether you’re looking for 2 or 20, or using leftover mashed potatoes.

1 c. mashed potatoes
1 t. lemon zest
¼ t. rosemary, finely chopped
salt & pepper

  1. Blend all ingredients together.
  2. Salt & pepper to taste.

Serves 2.
