Homemade Shrimp Scampi in a Flash
Ever wondered how to make homemade shrimp scampi? Ever wanted to try but thought you might not have the time? Good news! This easy shrimp scampi recipe takes less than 20 minutes and tastes as good as a chef-made meal. For extra-fast preparation, buy pre-peeled shrimp and bottled lemon juice instead of squeezing your own.
8 oz linguine
2 ½ tbsp. unsalted butter
1 lb. peeled medium shrimp
2 garlic cloves, minced
Pinch of red pepper flakes, to taste
¼ cup chicken stock
¼ cup lemon juice
Salt and pepper to taste
Lemon zest (one lemon)
1 ½ tbsp. chopped parsley
1/3 cup grated Parmesan
Add salt to a large pot; set to boil. Once boiling, add pasta and cook according to the package instructions, then drain.
In a large skillet, melt the butter over medium-high heat. Add shrimp, garlic, and red pepper flakes. Cook, stirring occasionally, until pink; it should be about 2-3 minutes. Stir in chicken stock and the lemon juice, then season with salt and pepper. Bring everything up to a simmer; then, take the skillet off the heat and add pasta, lemon zest, and parsley. Stir in well, serve immediately, and sprinkle some Parmesan on top!
