This easy shrimp scampi recipe takes less than 20 minutes and tastes as good as a chef-made meal. For extra-fast preparation, buy pre-peeled shrimp and bottled lemon juice instead of squeezing your own.

8 oz linguine
2 ½ tbsp. unsalted butter
1 lb. peeled medium shrimp
2 garlic cloves, minced
Pinch of red pepper flakes, to taste
¼ cup chicken stock
¼ cup lemon juice
Salt and pepper to taste
Lemon zest (one lemon)
1 ½ tbsp. chopped parsley
1/3 cup grated Parmesan

Add salt to a large pot; set to boil. Once boiling, add pasta and cook according to the package instructions, then drain.

In a large skillet, melt the butter over medium-high heat. Add shrimp, garlic, and red pepper flakes. Cook, stirring occasionally, until pink; it should be about 2-3 minutes. Stir in chicken stock and the lemon juice, then season with salt and pepper. Bring everything up to a simmer; then, take the skillet off the heat and add pasta, lemon zest, and parsley. Stir in well, serve immediately, and sprinkle some Parmesan on top!
