Easy Crispy Chicken Recipe

Make crispy chicken on any busy weeknight with this easy recipe. The chicken is rolled in Ritz crackers and basil for a delicious taste and takes less than thirty minutes to prepare. Pair with fresh vegetables for a healthy side!

Ingredients

12 Ritz crackers, crushed
3 Tbsp. grated parmesan cheese
1 tsp. dried basil leaves
6 small boneless skinless chicken breasts (1-1/2 lb)
½ tbsp. oil
3 cups cut-up fresh veggies (green peppers strips, slices of carrots, zucchini slices, etc.), cooked

Mix together crumbs, cheese, and basil on a plate. Rinse the chicken with cold water and then shake it. Set the chicken in the crumb mixture, making sure to coat each side of the piece. Set the chicken aside.

Heat the oil in a large, nonstick skillet on medium heat. Put the chicken in the skillet and cook for 6 to 7 minutes on each side or until golden brown on both sides and cooked through. Serve with vegetables and enjoy!
