Gazpacho Smoothie

Small tomato, quartered (or 4-5 large, whole cherry tomatoes)
3/4 c. tomato juice
1/2 small garlic clove
2 Tbsp. fresh cilantro, chopped
2 Tbsp. lime juice (about 1/2 lime)

Freeze the tomato until it is hard as a rock! Then put it all in the blender until it is almost smooth. Garnish with lime wedge and cilantro sprig, if desired. Have fun with this recipe—add chopped onion and jalapeño, if desired, or whatever else you like. Makes one serving.

A different take on the smoothie—good for breakfast, lunch or dinner and extremely healthy.
