Zucchini Bread

 3 Eggs
 1 cup Oil
 2 cups Sugar
 2 cups Zucchini, peeled and grated
 2 ½ cups Flour
 2 tsp Baking soda
 ½ tsp Baking powder
 1 tsp Salt
 3 tsp Cinnamon
 2 tsp Vanilla
 1 cup Nuts, chopped
 8 oz Can crushed pineapple
 1 cup Raisins, optional

Mix eggs, oil, and sugar together in a bowl. Add grated zucchini and mix well.


Sift together flour, baking soda, baking powder, salt and cinnamon. Pour dry ingredients into zucchini mixture and mix well.


Add vanilla, nuts, pineapple, and raisins. Mix well.


Pour mixture into two greased and floured loaf pans or one bundt pan. Bake at 350 degrees F for one hour or until a toothpick test comes out clean.
