Swiss Roesti Potatoes

 4 tbsp Melted butter
 68 Boiled potatoes, peeled and shredded
 1 Onion, chopped (optional)
 ½ cup Shredded cheddar or swiss cheese
 Amounts of cheese, potatoes, and onions may be adjusted to suit your taste

Melt better in a skillet. Add onion and fry until translucent.


Add all potatoes and most of the cheese. Fry and stir slightly. Fry without stirring for an additional 5-8 minutes, until a golden crust forms at the bottom.


Turn with a pancake turner and press potatoes down to brown on the other side.


Season with salt, pepper, and remaining cheese.
