Sour Cream Enchilada Casserole

Yields1 Serving

A white and blue spatter plate with a serving of baked Enchilada Casserole, with chips and a dollop of sour cream.

 1 ½ lbs Ground beef
 1 Medium onion, chopped
 1 20 oz. can tomatoes
 16 oz Sour cream
 3 Jalapeno peppers, chopped
 1 lb Processed american cheese, chunked
 1 cup Grated sharp cheddar cheese
 Picante sauce, if desired
 Corn tortilla chips
 Garlic, salt, and pepper to taste

Brown ground beef, onion, garlic, salt and pepper.


Heat tomatoes, sour cream, jalapenos, and cheese until cheese melts. Add to browned ground beef and mix well.


In a large casserole dish, layer chips with cheese, and meat mixture. Top with grated cheese. Bake at 350 degrees F for 30 minutes.
