Preheat oven to 450 degrees Fahrenheit.
Peel sweet potatoes and dice into 1/2" cubes.
Add cubes to a large bowl with olive oil and toss.
Add salt and brown sugar and toss again until evenly coated.
Spread evenly onto a baking sheet lined with aluminum foil.
Roast for 30-35 minutes, flipping every 15 minutes, until tender.
Serves 8-10.
