Pecan Pie Muffins

A multicolor blue plate with Pecan Pie Muffins, surrounded by whole pecans.

 1 Box light brown sugar
 1 cup All purpose flour
 2 cups Pecans, finely chopped
 2 sticks Margarine, melted
 4 Large eggs (at room temperature, very important)

Mix flour and sugar until smooth and lump free.


By hand, add pecans and mix in well.


By mixer, beat eggs and margarine together.


Combine egg and margarine mixture with dry mixture, mixing well.


Spoon into foil cupcake liners. Bake at 375 degrees F for 18 minutes. Makes about 18-20 muffins.
