Make Thanksgiving a little bit easier with this simple glazed squash recipe. There's no need to gather a dozen different ingredients and spend hours fussing over this vegetable dish! You just need two acorn squashes, a half cup of brown sugar, and a sprinkle of salt and pepper. The brown sugar makes the squash sweet enough that even the pickiest of eaters will be asking for seconds, while the hands-off baking time lets you focus on more complicated main dishes. That's why glazed squash has become one of our staple fall side dishes!
Preheat the oven to 350° F.
Spray a baking sheet with cooking spray and place the squash halves on it, cut side down. Bake at 350° F for 30 minutes. Let the squash cool until it can be easily handled. Peel the squash and cut into bite-sized pieces.
Preheat oven to 400° F. Cover your baking sheet with foil and spray with cooking spray (the sugar will get very sticky and this will make clean-up easier). Spread the squash over the foil and sprinkle with salt & pepper, then top with half the brown sugar. Bake at 400° F for 5 minutes.
Toss the squash, sprinkle with more salt & pepper and add the remaining brown sugar on top. Bake at 400° F 15-20 minutes until bites are tender.
