Baked ziti is a lot like classic lasagna, except without all the fuss and layering. This freezer recipe is enough to feed a real crowd—30 to 40 people! You can choose to thaw all four of the pans at once, or thaw the pans one at a time if you only need to feed 6-10 people (or a family of four, and you want leftovers!). We love that this recipe can be frozen for a few weeks or a few months, and that it’s just as rich and cheesy as when it first went into the freezer. Baked ziti is the perfect dish for potlucks, family gatherings, or midwinter comfort food.
12 c. spaghetti sauce
3 lbs. ziti or penne pasta
2 (24 oz.) tubs cottage cheese or ricotta
1 1/2 cups grated Parmesan cheese
3 eggs slightly beaten
1 1/2 lbs. shredded mozzarella cheese
- Cook pasta per package directions. Stir cottage cheese, Parmesan cheese and beaten eggs in a very large bowl. Stir in 1/2 the spaghetti sauce, set aside remaining sauce for later. Stir in half the cheese and all the pasta. Stir until all the cheese and pasta is coated in the spaghetti sauce.
- Divide between 4 (9 x 13) pans. Pour remaining sauce over each pan and coat evenly. Sprinkle remaining mozzarella cheese on top.
- Wrap each pan lightly with plastic wrap and then aluminum foil, then freeze.
- When you’re ready to eat, allow pan to thaw for 24 hours. Remove foil and plastic wrap. Bake at 375 degrees for 20 – 30 minutes or until hot and bubbly. This recipe makes enough to feed 30-40 people.
