Chocolate covered strawberries are the classic Valentine’s Day treat. The best part of this recipe? All you need to make delicious, hardening chocolate is a bag of chocolate chips and a tablespoon of butter. A double boiler can make melting the chocolate even easier, but the microwave can work just as well. Just let the chocolate covered strawberries sit in the refrigerator until the chocolate sets for the best finish.
12 large, ripe strawberries (with leaves)
6-7 oz. of your favorite chocolate chips
1 T. butter or coconut oil
1. Carefully wash the strawberries and pat them dry with a paper towel. Set aside. Prepare a plate covered with parchment or wax paper.
2. Melt the chocolate and butter in a double boiler, stirring often (or in the microwave in a microwave safe dish, stirring every 30 seconds) until smooth.
3. Holding each berry by the leaves, dip carefully into the chocolate, let excess chocolate drip off. Place the berry on the parchment or wax paper. Do not let berries touch each other. When finished dipping the 12 berries, place the plate into the refrigerator until the chocolate sets.
