Garden Salsa

15 tomatoes, peeled and chopped
1 onion, diced
2 green peppers, diced
1 large red pepper, diced
2 banana peppers, diced
4 jalapeno peppers, diced
2-3 habenero peppers
1 (28 oz) can tomato sauce
1 (6 oz ) can tomato paste
1/4 cup white vinegar
2 Tbsp. chili powder
1 1/2 tsp. Italian seasoning
2 tsp. salt
2 Tbsp. cornstarch
1/4 cup water

In a large pot, mix the onion, tomatoes and all peppers. Stir in tomato sauce, paste and vinegar… then season with chili powder, Italian seasoning and salt. Bring to a boil over medium-high heat; reduce to low and simmer 1 hour.

In a small bowl, mix together cornstarch and water; stir into the salsa until thickened. Transfer salsa to sterilized jars, leaving 1/2 inch at top; seal. Heat jars in a boiling water bath for 15 minutes. Store sealed jars in the refrigerator. Enjoy!
