Lazy Day Freezer Stew

Keep a few bags of lazy day freezer stew in the fridge for those weeknights when you want a filling meal without any cooking. Hearty stew ingredients like beef, potatoes, carrots, and onions can be sealed in a freezer bag and stored for up to four months. When you're ready to eat, just throw it in the slow cooker. This is a great recipe to keep in mind for meals with lots of leftovers; it's easy to substitute beef with turkey, for example, or leave out a few of the vegetables. Just toss in whatever you have on hand, and you have yourself a bag of lazy day freezer stew!

 4 lbs cubed stew beef
 4 cups baby red potatoes (cut in 1/2)
 10 oz dried lima beans
 4 tsp quick-cooking tapioca
 salt (to taste)
 pepper (to taste)
 15 oz tomato sauce (1/2 of this will go in each bag)
 2 tbsp brown sugar
 4 cups baby carrots
 2 onions (chopped)
 2 cups celery (chopped)

Split all the ingredients between two 1-gallon freezer bags and store in the freezer until your next "lazy day" (up to four months!). Label each one gallon bag with the date, name of recipe, and cooking instructions.

When you're ready to use it, empty the contents into a slow cooker, add 1 cup of water, and cook on low for 4-6 hours. Serve over rice or noodles, or alone as a hearty soup. Enjoy!
