Brush the chicken on all sides with 1 Tbsp. of olive oil. Salt & pepper to taste and place on the air fryer pan.
In a medium bowl, toss together the potatoes, carrots, seasonings, and remaining olive oil.
Pour onto the perforated pan. Place the vegetables on the short rack and the chicken on the tall rack.
Cook at 425° F for 45 minutes. Chicken is well done when the internal temperature is 165° F.
