2 Tbsp. unsalted butter
1/3 c. chopped onion
4 c. skim milk
1 c. instant mashed potato flakes
Parsley, salt, pepper and garlic powder, to taste.
Place butter in saucepan with onion, cook until onion is soft. Add milk, cook on medium heat until milk is hot, but not boiling. Turn off heat and stir in potato flakes. Add more for desired thickness.
Optional: Use 2 cups of cheddar cheese or any kind you like!
ENJOY. This recipe is so good I always make a double recipe.
* I use skim milk and unsalted butter for a lighter version.
