Swiss Roesti Potatoes

4 Tbsp. melted butter
6-8 boiled potatoes, peeled and shredded
1 onion, chopped, optional
1/2 c. shredded cheddar or Swiss cheese
Amounts of cheese, onions and potatoes may be adjusted to suit your taste.

Melt butter in a skillet. Add onion and fry until translucent. Add all potatoes and most of cheese. Fry and stir slightly. Fry without stirring for an additional 5-8 minutes, until a golden crust forms on the bottom. Turn with a pancake turner and press potatoes down to brown other side. Season with salt, pepper and remaining cheese.
