Sweet Potato Carrot Gratin

4 c. sweet potatoes, peeled and cut into 1/2" cubes
2 c. sliced carrots, I use pre-sliced carrots from the supermarket
1/3 c. orange juice
2 Tbsp. brown sugar
1/2 c. dried cranberries
1/4 tsp. each salt and pepper
3/4 c. shredded cheddar

Preheat oven to 350° F.
Put sweet potatoes and carrots in pot, cover with water. Bring to boil and cook for 10 minutes or until tender. In large bowl, combine next 4 ingredients (juice to salt and pepper). Drain sweet potato mixture, add to bowl and toss to coat. Transfer to casserole dish coated with non-stick spray and bake for 20 minutes. Sprinkle cheese on top and bake for 10 minutes more.
