Enchiladas

2-lbs. ground beef
1 medium onion
2 pkg. taco seasoning
2/3 c. water
Mexican rice mix (prepare as directed, set aside)
1 pkg. 8" flour tortilla shells
1 small can of refried beans
2 large cans of enchilada sauce
1 pkg. shredded Mexican or taco blend cheese

Brown ground beef and onion. Add taco seasoning and water. Simmer for about 7 minutes. Add rice mixture. Warm tortilla shells in microwave for a few seconds (they are easier to roll up(. Spread refried beans in middle of shell, add meat mixture, roll up and place in 8" x 13" baking dish. Pour enchilada sauce over tortillas then sprinkle with cheese. Bake at 350° F for 20-25 minutes.

Serve with tortilla chips and salsa.
