2-lbs. ground beef
1 small onion
1 pkg. enchilada seasoning
1-2 cans refried beans
Enchilada sauce
Tomato sauce
Large flour tortillas
Shredded cheese
Sliced black olives
Jalapeño peppers
Cook ground beef and onions over medium heat, drain grease off ground beef, then add enchilada seasoning. Heat refried beans separately. Fill tortilla shells with meat mixture, then refried beans, fold over like a taco. Pour enchilada sauce and tomato sauce on top of filled tortilla shells and line them in a baking dish. Bake at 350° F for 30 minutes, then sprinkle shredded cheese over enchiladas and top with black olives and jalapeños. Bake until cheese is melted. Makes approximately 10 enchiladas.
