1 cup butter
3/4 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
1 tsp. vanilla
2 1/4 cups all purpose flour
1 tsp. baking soda
Cream butter and sugars until fluffy. Add eggs and vanilla and beat until well mixed. In separate bowl, whisk flour and baking soda together, then add slowly to creamed mixture, beating until combined. Add mix-ins, if desired, drop scant 1 Tbsp. amounts onto ungreased cookie sheet (these will spread into thin, chewy cookies). Bake at 375° For 10 minutes. Cool on cookie sheet for a few minutes, then remove to a wire rack to cool completely.
Mix - Ins and Variations:
- 1 tsp. pumpkin pie spice (try adding butterscotch or toffee chips, too, if you want extra richness)
- 1/2 cup chopped pistachios
- 2 Tbsp. unsweetened cocoa (add plain or colorful chocolate bits if you want extra richness)
- 1 tsp. cinnamon
- 2 Tbsp. minced lemon peel and 1/2 tsp. lemon extract (reduce vanilla extract to 1/2 tsp. in basic recipe)
- 1 Tbsp. dark instant coffee (add chocolate bits for extra richness)
- 1/2 - 3/4 shredded coconut and 1/2 tsp. coconut extract
- Replace vanilla with maple extract
- Toffee chips
- Mint chocolate chips
- Peanut butter chips (with or without chocolate)
